A basic and easy course in how to bake with sourdough only at Lottas Bak&Form. An educational opportunity, a fun activity for friends or a booked course for the family.
During the course, you will have the opportunity to bake with cultured grains and sourdough; an insight into how we bake inside the bakery. Together with Lotta, you will get tips and tricks for baking sourdoug-bread, rolls and baguettes, and of course to score bread and make new doughs.

Our sourdough courses are for those interested, both beginners and those who have baked before. We go through different doughs with varying consistency and thickness, the difference between cold and hot fermentation and how long you can ferment a dough and how it should feel when it is ready to be baked. We work with different cultural cereals and learn different baking techniques such as proofing in a basket with and without a cloth, and different methods of shaping with rolls and baguettes. You will feed sourdoughs and start a new sourdough. Discussions are held on how to handle a freshly risen dough.
We bake the bread in our large stone oven with steam, of course, then we have coffee and taste what we have baked and go through some different types of bread. It is very practical work and we stand around the baking table almost all the time.

This is binding and in case of cancellation the course fee will not be refunded, try to transfer to someone else instead. If there are fewer than 6 participants, the course will be cancelled and the fee will be refunded or you will be offered a new course date.
The maximum number of participants is 10 people. If you are a group of more than 6 people, it is possible to book a separate baking course where we agree on suitable dates. Bring clean inndoor shoes that can become floury, your own apron and something to wear on your head. Headgear is also available to borrow from us.
It will be hot in the bakery, so wear a t-shirt, not a long-sleeved shirt or a thick jumper. Feel free to bring a notebook to keep notes or write down recipes. You are welcome to bring a jar for sourdough if you want to take some home and possibly a bowl/jar for a dough you want to continue with at home. There will be at least two loaves of bread, some baguettes and rolls to take home.
